Pecan Fingers, from my Betty Crocker Cookbook

Incredibly delicious--guests will rave!!!

From p 139

3/4 cup butter
3/4 cup confectioner’s sugar
1 1/2 cups flour
2 eggs
1 cup brown sugar (packed)
2 Tablespoons flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1 cup chopped pecans

Oven — 350 degrees.

Cream butter and confectioner’s sugar. Blen in 1 1/2 cups flour. Press evenly in bottom of ungreased baking pan, 13x9x2 inches. Bake 12 to 15 minutes.

Mix remaining ingredients, spread over hot baked layer and bake 20 minutes longer. Cool; cut into bars, about 3 x 1 inch. 32 cookies.

    I left my old Betty Crocker cook book at our lake house not realizing my old Pecan Finger receipt was in it. Havent used that receipt in over five years. Wanted to bake some for friends that have never heard of them. Four hours away I was so sad not to have it on hand. I am so excited to find it on line. Thanks!

    My recipe for pecan finger and or coconut finger chews also had a lemon glaze to it but after 30 years my book has taken a beaten and that page is missing, that is the glaze I need.My daughter has asked me for the recipe and i found it on your site but not the glaze

    Hello, Glenda! The recipe is very Betty Crocker and quite simple. My beaten up page is still sitting in between the covers of the book, although not attached, but the recipe is quite clear. Yay! So here you go – Orange-Lemon Icing: 1 1/2 c confectioners sugar, 2 T butter, melted, 3 T orange juice and 1 Tsp lemon juice. Mix, then spread. So glad I could help! 🙂
