New Year: New Magazine Subscription

My first issue of Cook’s,, a culinary magazine given as a gift from our Thanksgiving guest, arrived in the mail the other day.  Tonight, because the title, picture and description of this dish called to me from the page, I’m fixing “Nut-Crusted Chicken Cutlets.”  And I really think I’ll be able to.  Because this is a magazine that helps you to know how to make something really turn out as promised.  They give you the secrets, the tips, the problems that can exist, along with the tricks as to how the normal Joe* can avoid them.  At least, that’s how it seems.  So I’ll let you know!  And thanks, Cindy, for this new experience!

*Normal Joe = me in the kitchen.  It’s the realistic, practical me.  I know, ahead of time, that I will be substituting the “panko” (“Japanese-style bread crumbs”) with my homemade bread crumbs.  I figure, “It’ll work just fine, and only the Japanese would know the difference.”  I know it would be better to use the real ingredients, but really, would I even find panko on one of the Acme shelves??  I’m not going to let a little ole panko crumb stand between me and a new cashew-crusted creation that will delight David’s (and my) hearts when compared with the chili that he’s been eating for the past week!  (I’m quite creative with the B&B food, but I’m afraid I’m, ah, not-so-much with our “home food”–at least not with the same degree of regularity as I show with the B&B fare!  Thankfully, David’s a great sport!)

PS.  I’ll try to remember to take pictures and post them, along with the review, tomorrow!
